Tangy BBQ Tofu & Gluten-Free Honey Cornbread

It's not a summer meal without some meaty tangy BBQ and cornbread! We've partnered with two of our favorite brands to come up with these Tofu Ribs and GF Honey Cornbread recipes. When you cut our extra firm and extra meaty tofu into thick strips to mimic ribs, slathered up in Haven's Kitchen Tangy BBQ Sauce, you have a classic summer meal!

INGREDIENTS

Gluten-Free Honey Cornbread

  • 1 cup cornmeal
  • 1 cup Renewal Mill 1-to-1 Gluten-Free Baking Flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 eggs, lightly beaten
  • 1 cup milk, regular or dairy free
  • ⅓ cup honey
  • 4 tbsp butter, melted and cooled
  • additional butter, for greasing

Tangy BBQ Tofu

INSTRUCTIONS 

Gluten-Free Honey Cornbread

Cooking Time: 30 min
Serves 4

  1. Preheat oven to 375ºF. Grease a 8X8 baking pan with about 1/2 tbsp butter.
  2. In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. Push dry ingredients to the sides of the bowl, so you have a well in the middle. Add eggs, milk and honey to the well and stir to combine.
  4. Add melted butter and combine thoroughly.
  5. Pour batter into greased pan. Bake for 30 minutes, rotating halfway through, until golden brown. If not baking in a cast iron skillet, it may take a few extra minutes to bake. Check with a toothpick inserted in the middle to come out clean.
  6. Let cool for 10-15 minutes, then slice and drizzle with extra honey if desired.

Tangy BBQ Tofu 

Cooking Time: 45 min
Serves 4

  1. For the best tofu, try pressing it ahead of time by placing sliced tofu between two plates weighed down with a can for at least 20 minutes. We like to do this before work in the am, so it's ready at dinner time
  2. When you’re ready to cook, preheat the oven to 425. Drain the liquid from tofu and cut into slices, then in half
  3. Combine ½ pouch of BBQ sauce with about a tablespoon of olive oil. Toss with the tofu gently to coat it
  4. Turn stove onto medium-high heat. Using an oven safe pan, fry the tofu for about 2 minutes each side
  5. Transfer tofu to the oven, and bake at 425 for 10 minutes, until golden brown and finish off with more Tangy BBQ sauce
