Pumpkin Pillow Tea Cookies

Transform Renewal Mill's Upcycled Sugar Cookie Mix into these soft, spiced, and perfectly pumpkiny treats. These tender little pillows are made with pumpkin puree, creamy coconut milk, and a hint of pumpkin pie spice for a chewy treat that tastes like fall.

 

Pumpkin Pillow Tea Cookies 

Makes 32 Cookies

 

WHAT YOU NEED FOR THE COOKIES 

  • 1 bag Renewal Mill Upcycled Sugar Cookie Mix
  • ¼ cup pumpkin puree
  • ¼ cup coconut milk
  • 2 tablespoons neutral oil (or melted coconut oil)
  • ½ teaspoon pumpkin pie spice

 

EQUIPMENT 

  • Parchment-lined cookie sheet

 

TO MAKE THE COOKIES 

Preheat the oven to 350F with a rack in the center.


Put the flour, sugar, cocoa, baking soda, and salt in a large bowl and whisk to blend.

Combine pumpkin puree, coconut milk, oil, and pumpkin pie spice in a medium bowl until smooth.

Add the Renewal Mill Sugar Cookie Mix and stir with a spatula until a thick dough forms.

[Optional] Chill dough for 15-20 minutes to help cookies hold their shape.

Roll small spoonful of dough into a ball and then press into disc shape and place on the cookie sheet.

Bake 10-12 minutes until edges are just golden.
