trying something new

I have only used this flour once in the olive oil cake in the Dec issue of Edible East Bay. But the cake was wonderful, tender, nuanced flavor. When I use it in other recipes I will have a better idea of how it manifests itself in other products.

Works like a charm!

Being a celiac I do lots of gluten free baking, and subbing this in for the normal 1:1 GF baking flours I've used in the past worked beautifully. The important difference though is that I'm using upcycled material, which I can feel even better about as I demolish my GF muffins/pancakes/waffles/etc!

A little dry

I used the 1:1 in 3 different recipes and all 3 came out on the dry side. The flavor was good the cookies were just dry. I also purchased the straight okara flour and am liking that a lot more. I’ve been mixing it with almond flour and psyllium husk powder and the flavor and texture of those cookies has been great. I find the okara flour to act somewhat like coconut flour but without the grit you can get from coconut flour.

Niece loved it!

My niece recently found out she's gluten intolerant and she loves to bake. I sent her this 3 pack and she LOVES it. She's made the brownies and is super excited to play with the 1 to 1 and Okara.
